Born and raised on the Aubrac plateau in Occitania, Cyril Attrazic is now one of the most uniquefigures in French gastronomy. After various experiences in France and London, always alongside his girlfriend, in 1998 the couple decided to“return home”to build their life and take over the reins of thefamily restaurant. Today, they represent the fourth generationwith 2 stars Michelin. Cyril Attrazic's cuisine is a contemporary interpretation of the Aubrac region: raw, powerful, preciseand deeply rooted in identity. He works with each product in its ecosystem, promoting local farms andproducts with a sustainable approach. Together with part of his family, farmers and breeders fromAubrac, he decided to starthisown production and selection of cattle for fattening (two and a halfyears) while respecting the nutritional balance(omega 3 and omega 6).The aim is to achieve greaterintramuscular fat, which enhances flavour and tenderness. At Cyril Attrazic's restaurant, the cuisinefocuses on concentrated flavours, fermentation, oxidation and good farming practices.The menu favours local produce, enriched with seasonal products from small producers in Lozère. The result? An explosion of unexpected flavours!Also awarded a green star, it has always offered concrete Corporate Social Responsibility initiatives
