Nicolas Stamm-Corby was only 25 when he decided to invest all his savings inopening a small 16-seat restaurant, La Fourchette, in the centre of Haguenau(Bas-Rhin). Thatsame year, he met Serge Schaal, his future husband andbusiness partner. In 2000, theymoved to Obernai (Bas-Rhin) to open LaFourchette des Ducs, located in a magnificent half-timbered house dating backto 1921 (the former Clos Sainte Odile, created by Ettore Bugatti), one of the mostcharming places in Alsace, with two Michelin stars since 2005: on one side, theSalon d'Hiver, classified as a historical monument, with Spindler inlays, Laliqueappliqués and other patinated wood panelling; on the other, theSalon d'Été, amore sober Baccarat salon opening onto a splendid terrace. Based on thevalues of the region,Nicolas Stamm-Corbyhas made his own, he has created acuisine with strong flavors, but which does not exclude original and alwaysharmonious combinations.Tradition is his reference point, creativity a constantdetermination. He restores all its prestige to classic French cuisine, which hereinvents and takes to the highest heights.There is, of course, thesearch for excellence, not protecting tradition butpreserving it, that is, constantly reinventing it with audacity.
